Using store bought cake, Pandoro (Italian Christmas cake) or brioche these are filled with creamy mascarpone and cherry sauce. Perfect for that special dessert recipe you need!

6 dessert glasses or cups (capacity 1¼ cups)
Ingredients

oz
(200g) pandoro
(or brioche, panettone or plain cake)
1
cup
whipping cream
1
cup
mascarpone cheese
2
tablespoon
powdered (icing) sugar
⅓
cup
amaretto liqueur
⅓
cup
finely chopped dark chocolate
2
tablespoon
flaked almonds
(toasted)
1
quantity of cherry sauce.
(or use canned cherry pie filling)
Instructions
Whip cream and powdered (icing) sugar to soft peaks.
Fold mascarpone and chopped chocolate into the cream.
Slice pandoro ½ inch or 1cm slices.
Divide half the cherry sauce amongst 6 dessert glasses or cups.
Tear pandoro to fit and arrange in one layer (using half of the pandoro) on top of cherry sauce.
Drizzle each with 1 ½ teaspoons of amaretto liqueur.
Divide half of the mascarpone cream amongst the 6 dessert glasses or cups.
Repeat with cherry sauce, pandoro, liqueur and finish with mascarpone cream.
Top with almonds and a cherry.
