Mini Trifles with Mascarpone and Cherries! These individual Mascarpone and Cherry trifles are so delicious!

Using store bought cake, pandoro or brioche these are filled with creamy mascarpone and cherry sauce. Perfect for that special dessert recipe you need!

A good dessert is the perfect ending to a delicious meal. If it’s quick and easy then all the better for the cook! While I love cooking and baking, I’m usually exhausted after cooking a big feast and easy desserts are all I want to do. My favourites are Easy Chocolate Puddings and Baked Peaches stuffed with Amaretti.

Ingredients

These mini trifles are quick and easy with only a few ingredients.

  • pandoro (or you can use brioche, panettone or plain cake)
  • cream
  • mascarpone
  • sugar
  • amaretto liqueur (or liqueur of your choice)
  • my cherry sauce (recipe link here)

Instructions

  1. Make cherry sauce and cool. You can do this the day before.
  2. Whip the cream and sugar to soft peaks.
  3. Fold mascarpone and chocolate into whipped cream.
  4. Layer ingredients into the glasses – cherry sauce, pandoro (drizzle with liqueur) and cream.
  5. Repeat with a second layer.
  6. Top with almonds and a cherry.

Tips for success and FAQ’s

What if I don’t have time to make homemade cherry sauce?

This cherry sauce is easy to make and can be made a day or two ahead. However, if you have no time or want to make this Mini Trifles even easier, substitute with canned cherry pie filling.

Can I make a non-alcoholic version of these Mini Trifles?

Absolutely! Apple juice would be perfect for these trifles or any juice you prefer.

Using store bought cake, Pandoro (Italian Christmas cake) or brioche these are filled with creamy mascarpone and cherry sauce. Perfect for that special dessert recipe you need!

Equipment

  • 6 dessert glasses or cups (capacity 1¼ cups)

Ingredients

  • 7 oz (200g) pandoro or brioche, panettone or plain cake
  • 1 cup whipping cream
  • 1 cup mascarpone cheese
  • 2 tablespoon powdered (icing) sugar
  • 1/3 cup amaretto liqueur
  • 1/3 cup finely chopped dark chocolate
  • 2 tablespoon flaked almonds toasted
  • 1 quantity of cherry sauce. or use canned cherry pie filling

Instructions

  • Whip cream and powdered (icing) sugar to soft peaks.
  • Fold mascarpone and chopped chocolate into the cream.
  • Slice pandoro ½ inch or 1cm slices.
  • Divide half the cherry sauce amongst 6 dessert glasses or cups.
  • Tear pandoro to fit and arrange in one layer (using half of the pandoro) on top of cherry sauce.
  • Drizzle each with 1 ½ teaspoons of amaretto liqueur.
  • Divide half of the mascarpone cream amongst the 6 dessert glasses or cups.
  • Repeat with cherry sauce, pandoro, liqueur and finish with mascarpone cream.
  • Top with almonds and a cherry.
