This is a case of simple is best and you can’t get much better! Crunchy, flaky pastry, baked, sweet fruit all drizzled with honey. And the ground almonds under the figs absorbs the fruit juices so that the pastry stays crisp.

Simple ingredients are all you need to make Fig Tartlets.

  • fresh figs
  • puff pastry
  • unsalted butter
  • superfine (castor) sugar
  • ground almonds
  • ground cinnamon
  • honey

Variations

This recipe can be varied depending on what you have available.

  • use thin slices of apple or pear instead of figs
  • try slicing apricots or nectarines in place of figs
  • substitute ground hazelnuts for ground almonds
  • different spices can be used like mixed spice, cardamom or ginger

Instructions

Before beginning these Fig Tartlets, preheat the oven to 400ºF/200ºC and line a baking sheet with non stick (parchment) paper.

  1. Slice figs lengthwise into 6 slices.
  2. Cut defrosted puff pastry into 5in/13cm rounds and mark a circle within leaving a 1/2in/1.2cm border.
  3. Brush pastry rounds with butter.
  4. Sprinkle and spread sugar and almonds on the inside circle.
  5. Arrange fig slices overlapping on the sugar/almonds, brush with leftover butter and sprinkle with ground cinnamon.
  6. Drizzle with half the honey then bake. Drizzle with remaining honey after baking.

Tips for success and FAQ’s

  • Be sure to have the oven preheated and hot because puff pastry needs that heat to gain lots of rise.
  • Defrost the puff pastry but keep it cool to make it easier to work with.
  • Ensure the puff pastry is completely defrosted otherwise it will crack and break.
  • Use a small saucer or little pie pan as a guide to cut pastry rounds.
  • Don’t cover all the pastry with figs and filling – keep a pastry border around the edge.
How long will puff pastry take to defrost?

If you are using a sheet like I am, it will only take 10 minutes or so. However, if you have bought a roll of pastry, it will need to be defrosted overnight in the refrigerator.

What do I do with the leftover pastry?

Make delicious, crunchy pastry bits! Just brush the leftover pieces with melted butter and sprinkle with sugar. Arrange on a lined baking sheet and pop into the oven while the fig tartlets are baking. Yum!

How long do these tartlets keep?

These tartlets are best just out of the oven or at least the day of baking.

How can I store and reheat leftovers?

While the fig tartlets won’t be at their best, store pastries at cool room temperature or covered in the refrigerator. Reheat in a hot oven for 3-5 minutes until just warmed through.

Ingredients

  • 4 fresh figs
  • 1 sheet (approx 10in/25cm square) store-bought frozen puff pastry defrosted but chilled
  • 1 tablespoon unsalted butter melted
  • 2 teaspoons superfine (castor) sugar
  • 4 teaspoons ground almonds
  • teaspoon ground cinnamon
  • 2 tablespoons honey
  • vanilla ice cream or cream to serve

Instructions

  • Preheat oven to 400ºF/200ºC. Line a baking sheet with non stick (parchment) baking paper.
  • Wash figs, cut off stem and slice each fig lengthwise into 6 slices
  • Cut 5in/13cm circles out of the puff pastry. Mark (but don't cut all the way through) a 4in/10cm circle within each. (Use a small saucer or little pie pan as a guide to cut pastry rounds – measurement doesn't have to be exact, just what you can fit on the puff pastry sheet.)
  • Brush melted butter over each circle of pastry.
  • Within the inner circle, sprinkle and spread 1/2 teaspoon sugar and 1 teaspoon ground almonds onto each pastry round. Then arrange fig slices overlapping on the pastry, keeping with the inner circle.
  • Brush fig slices with any remaining butter, sprinkle with cinnamon and drizzle half of the honey over figs.
  • Bake for 15-18 minutes until pastry it puffed and browned and figs are softened
  • Drizzle with remaining honey. Serve warm with vanilla ice cream or cream.
